**Blend:** Combine the chopped cucumbers, fresh spearmint leaves, lime juice, sweetener, and water in a high-speed blender.
**Liquefy:** Blend on high until completely smooth.
**Strain (Optional):** For an ultra-clear, "ice-like" popsicle, pour the mixture through a fine-mesh sieve or nut milk bag to remove the cucumber pulp. If you prefer a rustic, healthy texture, you can skip this step!
**Pour:** Pour the liquid into your popsicle molds.
**Freeze:** Freeze for at least 6 hours, or until solid.
**Serve:** Run the molds under warm water for a few seconds to release the popsicles.
