**Cook the Rice:** Combine rinsed jasmine rice with 270g of water. Cook using your preferred method (rice cooker or stovetop) until tender. For best results, let the rice cool completely before frying.
**Prepare Aromatics & Sauce:** Whisk the soy sauce and oyster sauce together in a small bowl. Separate the white and green parts of the sliced scallions.
**Scramble Eggs:** Heat a wok or large pan over high heat with a tablespoon of oil. Add the eggs, scramble until just set, and remove from the pan.
**Fry Aromatics:** Add a fresh splash of oil to the pan. Add the white parts of the scallions and sauté until fragrant.
**Stir-fry Rice:** Add the cooked rice to the pan, breaking up any clumps. Keep the heat high to get a slight "toast" on the grains.
