Pomegranate & Beetroot Booster Salad (Pre-Workout Intimacy Plate)
By the QuiteRecipes team (Jamy & Kaïna) | Food Service Professional, Early Childhood Expert & Parents
Roasted beets, pomegranate, peppery arugula and pistachios — a double-action nitrate and antioxidant plate for sustained energy.
Some plates earn their name. This one combines two of the most studied circulation allies — beets for nitrates and pomegranate for antioxidants — and layers them with the peppery snap of arugula and the crunch of pistachios. It's the salad we reach for before anything that requires sustained energy: a workout, a long evening, a dinner that matters. The pomegranate molasses dressing ties it together with a sweet-sour tangle that makes you forget you're eating something this good for your blood vessels.

👨🍳 Instructions
Roast the beets (toss in olive oil and salt, 200°C / 400°F for 35 minutes) until tender; let them cool slightly.
Whisk the pomegranate molasses with the olive oil, a pinch of salt, and black pepper.
Toss the arugula with just half the dressing; arrange the beets, pomegranate arils, pistachios, and goat cheese on top.
Drizzle the remaining dressing over and finish with a crack of pepper before serving.
⚠️ Common Mistakes
- ✕
Roasting beets sliced too thin, which makes them hard before they're sweet — thick wedges are the way.
- ✕
Dressing the arugula too heavily; it needs just a kiss of vinaigrette.
- ✕
Skipping the salt on the beets, which mutes their sweetness against the tart pomegranate.
🔄 Variations
Swap goat cheese for feta or shaved parmesan.
Add grilled chicken or chickpeas for a complete lunch.
Use walnuts instead of pistachios when that's what the pantry says.
🧊 Storage
- 📦
The roasted beets keep 3 days; assemble the salad fresh for the best texture.
- 📦
The dressing keeps a week in a jar — shake before using.
💡 Chef Tips
Tip 1: Toss the warm beets in a little dressing while they're still warm — they drink it up.
Tip 2: Buy pomegranate molasses once and keep it forever; a spoon turns a boring salad into a dinner conversation.
Tip 3: If the arugula wilts under warm beets, keep the beets fully cool for a crisp salad.
❓ FAQ
Q
Why the pre-workout label? The dual nitrate-and-antioxidant profile supports blood flow and sustained energy, which is why it earns a spot before training or a long evening.
Q
Is pomegranate molasses high in sugar? It's concentrated, so a spoonful goes a long way; the drizzle we use stays modest.
Q
Can I make it vegan? Yes — leave out the goat cheese or swap in a spoon of tahini.
