In a large bowl, dissolve the Jell-O mix in the boiling water, stirring well until fully dissolved.
Add the crushed pineapple (with juice) to the mixture and stir.
In a second bowl, beat the cream cheese until smooth and creamy.
Gradually incorporate the pineapple Jell-O mixture into the cream cheese, whisking until homogeneous.
Gently fold in the whipped cream (or Cool Whip) using a spatula to keep the mixture light.
