- 🫗 1/2 cup flat-leaf parsley, chopped
- 🫗 Black pepper to taste

Warm the oil in a wide pot over medium heat. Cook the leek 5 minutes until soft.
Add the mushrooms and cook until they release their liquid and brown, about 8 minutes. Add the garlic and thyme; cook 1 minute more.
Stir in the barley, then begin adding the warm broth one ladle at a time, stirring, letting each addition be absorbed before the next.
Continue until the barley is tender with a pleasant chew, 30–35 minutes. You may not need all the broth.
Turn off the heat; stir in the Parmesan (if using) and half the parsley.
Rest 5 minutes, then serve with the remaining parsley and black pepper.
