In a large bowl, combine the cooked rice, beaten eggs, parmesan, parma ham, breadcrumbs, pepper and a pinch of salt.
Mix with a fork until the rice binds into a sticky, cohesive mixture.
Shape into 8 patties about 2 1/2 inches wide, pressing firmly so they hold together.
Heat the olive oil in a large non-stick skillet over medium heat.
Fry the rice cakes for 3-4 minutes per side until golden and crisp.
