This is the minestrone that runs on sunshine: tomato, carrot, celery, fennel, and zucchini, all vegetables grown for flavor rather than salt. White beans carry the protein and fiber, and a splash of lemon at the end keeps the whole pot bright like a summer garden in a bowl.

- 🫗 2 tablespoons olive oil
- 🫗 2 carrots, diced
- 🫗 2 celery stalks, diced

- 🫗 1 can (400g) no-salt-added cannellini beans, rinsed and drained
- 🫗 1 can (400g) no-salt-added diced tomatoes
- 🫗 1/2 cup (60g) whole-grain ditalini or small pasta
- 🫗 3 cups (90g) baby spinach, roughly chopped
- 🫗 2 tablespoons lemon juice
- 🫗 Black pepper and fresh basil to serve

Heat the oil in a large pot over medium heat. Cook the carrots, celery, and fennel (if using) 6 minutes until starting to soften.
Add the zucchini, sun-dried tomatoes, garlic, oregano, and bay leaf; cook 2 minutes.
Pour in the broth and the diced tomatoes with their juice; bring to a boil, then reduce to a simmer for 10 minutes.
Add the beans and pasta; simmer 10–12 minutes until the pasta is al dente.
Fold in the spinach and cook 2 minutes until just wilted.
Off the heat, remove the bay leaf, stir in the lemon juice and pepper, and ladle into bowls with torn basil.
