β οΈ Common Mistakes
- β
Overcooking Pasta: Ensure your pasta is al dente before adding it to the sauce, as it will continue to cook slightly when combined.
- β
Blending: If you prefer a completely smooth sauce, you can blend the steamed tomatoes and onion mixture before adding the protein.
π Variations
Corn Boost: Add 1/2 cup of corn kernels for extra sweetness and texture.
Spicy Kick: Add diced jalapeΓ±os or extra chili flakes if you prefer a spicier pasta.
π§ Storage
- π¦
Store in an airtight container in the refrigerator for up to 3 days. Reheat on the stove with a splash of water to keep the sauce from drying out.
π‘ Chef Tips
Tofu Prep: If using tofu, lightly pan-sear the cubes before adding them to the sauce to give them a firmer texture.
Sauce Thickness: If the sauce is too thick, add a small splash of pasta cooking water to achieve the perfect consistency.
