Mac and cheese is the national dish of childhood, and this version makes it more wholesome by sneaking the virtues of cauliflower straight into the sauce. Mashed and blended, the cauliflower melts into the cheese to add creaminess without changing the taste — it actually makes the dish creamier. Formed into individual muffin cups, it's a fun, grab-and-eat finger food that packs, plates, and vanishes without a fight.

- 🫗 250g cauliflower florets (about 3 cups)
- 🫗 250g elbow macaroni or shells
- 🫗 2 cups (200g) shredded cheddar or a melty blend
- 🫗 1/2 cup (120ml) milk
- 🫗 1 egg, beaten
- 🫗 1/2 tsp garlic powder
- 🫗 1/2 tsp Dijon mustard (optional)
- 🫗 Salt and black pepper
- 🫗 1/4 cup panko or breadcrumbs (optional, for crisp tops)
- 🫗 1 tbsp butter

👨🍳 Instructions
Preheat the oven to 200°C and grease a 12-cup muffin tin.
Cook the cauliflower florets in boiling salted water 10 minutes until very tender. Drain well.
Meanwhile cook the macaroni to just shy of al dente and drain.
Blend the cauliflower with the milk until completely smooth (or mash well by hand).
Stir the cauliflower mash, cheese, egg, garlic powder, mustard, and seasoning into the pasta.
Divide between the muffin cups, top with panko if using, and bake 18–20 minutes until golden and set.
