In a large pan, heat the ghee and sautΓ© the grated gourd for a few minutes until slightly tender.
Add the milk and cook over medium heat, stirring regularly, until the liquid is almost fully absorbed by the gourd.
Incorporate the sugar. The mixture will release some juice, continue cooking until it evaporates.
Add the Khoa (or milk powder) and cardamom powder. Mix well to get a creamy texture.
Add the chopped nuts and cook everything until the halwa starts to pull away from the sides of the pan and the ghee appears on the edges.
Serve hot or warm, garnished with a few extra nuts.
