Korean Fresh Strawberry Milk

The viral café drink, homemade and dangerously smooth. We macerate fresh strawberries with a little sugar until they go jammy, then swirl them into cold milk for that pretty pink gradient everyone photographs. It tastes like a milkshake and needs only four ingredients.

🥄 Ingredients

  • 🫗
    1/2 cup (75 g) fresh strawberries, finely hand-chopped
  • 🫗
2 tbsp granulated sugar or honey
  • 🫗
2 fresh strawberries, roughly mashed with a fork
  • 🫗
8 oz (240 ml) whole milk or creamier barista milk
  • 🫗
    Fresh strawberry chunks (for topping)

👨‍🍳 Instructions

1
👨‍🍳

In a small bowl, combine your finely chopped strawberries, mashed strawberries, and sugar.

2
👨‍🍳

Stir well and let the mixture sit at room temperature for 10-15 minutes. The sugar will draw out the natural juices, creating a rich, raw glossy syrup (maceration).

3
👨‍🍳

Spoon the sweet strawberry mash generously into the bottom of a clear serving bottle or tall glass.

4
👨‍🍳

Carefully tilt the glass and gently pour the 8 oz (240 ml) of ice-cold milk over the strawberry base to keep the layers distinct.

5
👨‍🍳

Drop a few extra strawberry chunks on top as a rustic garnish. Serve with a wide boba straw.

⚠️ Common Mistakes

  • ✕

Serving Immediately: Skipping the 10-minute maceration step means the sugar won't dissolve properly into the strawberry juices, leaving you with crunchy sugar grains and sour fruit.

🔄 Variations

✦

Strawberry Cream Dream: Replace 2 oz (60 ml) of the milk with heavy cream or half-and-half to create an incredibly luxurious, dessert-like texture.

✦

Plant-Based Korean Milk: Swap whole milk with high-quality unsweetened coconut milk or almond milk.

🧊 Storage

  • 📦

Because the fruit remains raw, this milk should be consumed within 24 hours of assembly. Keep it chilled in the refrigerator until ready to shake and drink.

💡 Chef Tips

✦

No Cooking Required: Unlike western strawberry syrups, authentic Korean strawberry milk relies entirely on *raw maceration*. This preserves a fresh, crisp berry aroma that pairs gorgeously with cold dairy.

✦

Chop, Don't Blend: Avoid using a blender for the fruit. Hand-chopping ensures you get satisfying, chewy bits of fresh strawberry with every single sip.
