- 🫗 1 packet (200g) konjac shirataki noodles
- 🫗 150g lean ground turkey (93%)
- 🫗 1/2 red bell pepper, julienned
- 🫗 1 cup shredded green cabbage
- 🫗 1/4 cup julienned carrots
- 🫗 2 cloves garlic, minced
- 🫗 1 teaspoon fresh ginger, grated
- 🫗 1 tablespoon low-sodium soy sauce (or tamari)
- 🫗 1 teaspoon sesame oil
- 🫗 1 green onion, sliced, for garnish

Rinse the shirataki noodles well, then dry-fry them in a hot skillet for 2-3 minutes to remove excess water. Set aside.
Sear the turkey in the same hot skillet with the sesame oil, breaking it up for 4-5 minutes until browned.
Add the garlic and ginger and cook for 30 seconds until fragrant.
Stir in the bell pepper, cabbage and carrots and stir-fry for 2 minutes until crisp-tender.
Add the noodles and soy sauce, toss everything together for 1 minute and remove from heat.
Garnish with sliced green onion and serve hot.
