Vegetarian Red Kidney Bean & Sweet Potato Chili with Smoked Spices (Cholesterol-lowering fiber)
By the QuiteRecipes team (Jamy & Kaïna) | Food Service Professional, Early Childhood Expert & Parents
Smoky, bean-rich vegetarian chili with tender sweet potato — a fiber-forward pot that supports healthy cholesterol without a grain of salt.
Red kidney beans are the quiet workhorse of cholesterol-friendly eating — their soluble fiber helps bind cholesterol in the gut. Sweet potato adds potassium and natural sweetness, and the smoked spices build a deep, savory character without a grain of salt.

⚠️ Common Mistakes
- ✕
Under-cooking the sweet potato — test it with a fork before you finish.
- ✕
Adding salt during simmering; the flavors concentrate and turn salty on their own.
- ✕
Using regular canned beans in salted water, which silently triples the sodium.
🔄 Variations
Add a can of diced tomatoes with green chilies for more kick.
Swap in black beans or pintos for the kidney beans.
Serve over a small scoop of brown rice for a fuller plate.
🧊 Storage

Keeps 4 days in the fridge and only gets better by day two.
- 📦
Freezes beautifully for up to 3 months.
💡 Chef Tips
Tip 1: The smoked spices do the seasoning — you won't miss salt once the paprika gets busy.
Tip 2: Rinsing canned beans washes away nearly half their sodium; don't skip it.
Tip 3: Mash a few beans against the pot wall to naturally thicken the chili.
Tip 4: Double the pot and freeze single servings for a heart-friendly fallback dinner.
❓ FAQ
Q
Is this really cholesterol-lowering? The soluble fiber in kidney beans genuinely helps bind cholesterol in the gut — it's a dietitian-endorsed mechanism, not marketing.
Q
How much is one serving? About a heaping cup of chili, beans and sweet potato included; easy to double for big appetites.
Q
Can I make it in a slow cooker? Yes, 6 hours on low; add the lime juice only at the end so it stays bright.
