Hidden Carrot and Red Pepper Pasta Sauce

Red pasta is the great camouflage — kids trust it, dip into it, and rarely look closer. So we roast carrots and red peppers until they are sweet and soft, blend them with good tomatoes, and the result is a sauce that tastes rounder and gentler than plain tomato. No chunks to pick out, no green leaves to argue about: just a velvet-red bowl that carries its vegetables invisibly. We double the batch and freeze half for a school-night rescue.

Preheat the oven to 200°C. Toss the carrot, red pepper, and onion with the olive oil, spread on a tray, and roast 20 minutes, until soft and sweet-edged.
