Mix the beef, oat crumbs, egg, parsley, oregano, salt, and pepper until just combined — don't overwork it.
Roll the mixture into 12 small, even meatballs.
Brown the meatballs in the olive oil in a wide pan over medium-high heat for 6–8 minutes, turning until browned all over. Lift them out.
In the same pan, add the garlic-infused oil, crushed tomatoes, and water, and simmer for 5 minutes.
Return the meatballs to the sauce and simmer for 10 more minutes until cooked through and the sauce has thickened.
Serve on their own or over rice or gluten-free pasta.
