A rich, nutrient-dense vegan bolognese sauce loaded with finely chopped mushrooms, carrots, celery, and zucchini in a savory tomato herb base.

**Sauté Aromatics:** Heat oil in a large pan over medium heat. Sauté the onions, bell peppers, carrots, celery, and garlic until softened.
**Add Texture:** Add the chopped mushrooms and zucchini to the pan. Cook until the mushrooms have released their water and the mixture is reduced and browned.
**Simmer:** Stir in the mashed tomatoes, tomato purée, rosemary, bay leaf, and oregano.
