👨🍳 Instructions
**Base:** Lay the first sheet of puff pastry flat on a baking sheet lined with parchment paper.
**Layer:** Evenly cover the pastry with the ham slices, followed by a generous layer of grated cheese. Sprinkle with a pinch of pepper.
**Cover:** Place the second sheet of puff pastry directly on top and press the edges gently to seal them.
**Shape:** Place a small glass or bowl in the center as a guide. Using a knife, cut from the edge of the glass out to the rim of the pastry to create equal "rays."
**Twist:** Gently pick up each strip and twist it several times to create the "sun" shape.
**Finish:** Brush the top with the beaten egg yolk for a golden finish and bake at 180°C for 25 minutes.

⚠️ Common Mistakes
- ✕
Overfilling: Putting too much cheese or ham near the center makes it difficult to seal the edges, causing the filling to leak during baking.
- ✕
Twisting too tight: If you twist the pastry rays too tightly, they may not puff up properly in the oven. Keep the twists loose and airy.
🔄 Variations
Vegetarian Style: Swap the ham for pesto or a tapenade spread to create a delicious vegetarian sun.
Gourmet Cheese: Use Gruyère or Emmental for a more traditional, nutty French flavor profile.
🧊 Storage
- 📦
This appetizer is best served warm immediately after baking. If you have leftovers, store them in an airtight container and reheat briefly in the oven to crisp up the pastry.
💡 Chef Tips
Keep it Cold: Puff pastry is easiest to work with when it is cold. If it gets too soft while you are cutting and twisting, place the whole tray in the fridge for 10 minutes before baking.
Egg Wash: For a deep golden color, mix the egg yolk with a tiny drop of water or milk before brushing.
