A refreshing pasta salad inspired by Greek flavors, perfect as a side dish or light main course.
This pasta salad pairs the comforting chew of farfalle or fusilli with the freshness of crunchy vegetables and Greek ingredients. It is bright, colorful, and exactly what a lunchbox needs to be. Comfort food that stays crisp for hours.

- π« 8 oz (approx. 225g) pasta (farfalle, rotini or fusilli)
- π« 1/2 English cucumber, diced (about 2 cups)
- π« 10 oz (approx. 1.5 cups) cherry tomatoes, halved
- π« 1 bell pepper (color of choice), seeded and chopped
- π« 1 small red onion, chopped (about 1/3 cup)
- π« 4 oz (1 cup) crumbled feta
- π« 1/2 cup pitted Kalamata olives
- π« 1/4 cup fresh parsley, finely chopped
- π« 1/3 cup red wine vinegar
- π« 1 tsp dried oregano
- π« 3 garlic cloves, grated or minced
- π« 1 tsp fine sea salt
- π« 1/2 tsp freshly ground black pepper
- π« 1/2 to 2/3 cup extra-virgin olive oil

Cook the pasta according to package instructions, then drain and let cool.
In a large bowl, combine the cooled pasta with the cucumber, tomatoes, bell pepper, onion, feta, olives and parsley.
In a separate bowl, prepare the dressing by whisking the vinegar, oregano, garlic, salt, pepper and olive oil until emulsified.
Pour the dressing over the salad and toss gently to coat all ingredients evenly.
