The Greek Cobb Salad

This salad reinvents the traditional Cobb with the iconic flavors of Greece: feta, Kalamata olives, and an oregano-forward finish. It keeps the classic structure but trades the ranch for Mediterranean soul. A lunch that feels like a trip to the islands.
🥄 Ingredients
- 🫗 1 1/2 cups cooked chicken
- 🫗 6 slices bacon, cooked until crispy and chopped
- 🫗 2 hard-boiled eggs, peeled and sliced
- 🫗 1 head romaine lettuce (or 3 romaine hearts)
- 🫗 1 avocado, sliced
- 🫗 3/4 cup (85g) feta cheese, crumbled
- 🫗 1 1/2 cups (300g) cherry tomatoes, halved
- 🫗 1/2 to 3/4 cup Kalamata olives (or chickpeas)
- 🫗 1 cup pita chips, lightly crushed
- 🫗 Optional: 1/4 cup fresh dill, chopped
- 🫗 1/4 cup red wine vinegar
- 🫗 1 tsp dried oregano
- 🫗 2 garlic cloves, minced or grated
- 🫗 3/4 tsp fine sea salt
- 🫗 1/2 tsp freshly ground black pepper
- 🫗 1/2 cup extra-virgin olive oil

👨🍳 Instructions
**Dressing:** Mix the vinegar, oregano, garlic, salt, pepper and olive oil in a jar and shake until emulsified.
**Assemble:** Arrange the chopped romaine lettuce on a large platter.
**Organize:** Arrange the ingredients (chicken, bacon, eggs, avocado, feta, tomatoes, olives/chickpeas) in distinct rows on the lettuce.
**Finish:** Sprinkle the crushed pita chips and fresh dill on top before serving.
**Serve:** Drizzle generously with the dressing just before eating.
