A smooth pumpkin dessert, naturally gluten-free and flourless. A light and tasty custard texture, perfect for all seasons.
A light, simplified version of traditional pumpkin pie, minus the gluten and the fuss. It bakes up soft and spiced with warm cinnamon and nutmeg. Autumnal comfort that fits a gluten-free table.

- π« 2 cups (approx. 450g) pumpkin puree (unsweetened)
- π« 3 large eggs
- π« 1 cup (240ml) coconut milk (or whole milk for a classic version)
- π« 1/2 cup maple syrup (or brown sugar)
- π« 1 teaspoon vanilla extract
- π« 1 1/2 teaspoons pumpkin pie spice mix (cinnamon, ginger, clove, nutmeg)
- π« 1/4 teaspoon salt

Preheat your oven to 175Β°C. Lightly grease a baking dish or individual ramekins.
In a large bowl, whisk the eggs until well blended.
Add the pumpkin puree, maple syrup, vanilla, spices and salt. Mix until smooth.
Gradually incorporate the milk while whisking gently to avoid incorporating too much air.
Pour the mixture into the baking dish.
Bake for 40 to 45 minutes, or until the center is set (it can remain slightly jiggly).
Let cool completely at room temperature before refrigerating for at least 2 hours for optimal texture.
