👨🍳 Instructions
**Preheat & Prep:** Preheat your oven to 180°C and line an 8x8 square pan with parchment paper.
**Mash:** In a large bowl, mash the 1/2 avocado until it is perfectly smooth—ensure there are no green lumps left.
**Mix Wet:** Add the olive oil, peanut butter, vanilla extract, and water to the avocado. Whisk thoroughly until the mixture is uniform.
**Combine Dry:** Sift in the flour, cacao/carob powder, sugar, and baking powder. Stir gently until just combined. Fold in your vegan chocolate nibs or chunks.
**Bake:** Pour the batter into the prepared pan. Bake for 20–25 minutes.
**Cool:** Let the brownies cool completely in the pan. They will be very soft when warm but will set into a dense, fudgy consistency as they cool.

⚠️ Common Mistakes
- ✕
Peanut Butter Overload: Use only the 1 teaspoon requested. If you add too much, it will mask the deep chocolate flavor and change the structural integrity of the brownies.
- ✕
Cooling Time: This is the most important step! If you cut them while hot, they will fall apart. Be patient and wait at least 30 minutes.
🔄 Variations
Sea Salt Topping: Sprinkle a pinch of flaky sea salt on top immediately after removing from the oven to contrast the sweetness.
Nutty Crunch: Fold in 1/4 cup of chopped walnuts along with the chocolate.
🧊 Storage
- 📦
Store in an airtight container for up to 4 days. These brownies stay incredibly moist due to the avocado content, so they don't dry out as quickly as traditional brownies.
💡 Chef Tips
Blending: If you are struggling to get the avocado smooth enough with a fork, pulse the avocado, oil, water, and vanilla in a blender first, then stir into the dry ingredients.
The "Done" Test: Brownies are best slightly under-baked. A toothpick inserted into the center should come out with a few moist crumbs, not completely clean.
