**Prepare Stew:** In a pan, sauté onions, tomatoes, bell peppers, and carrots. Add lentils and a splash of soy sauce (and any other spices you like). Cook until the lentils are tender and the moisture is mostly absorbed. Let it **cool completely** (this is vital, as hot filling will melt the rice paper).
**Prep Veggies:** Wash and slice your raw vegetables into thin, matchstick-like strips.
**Hydrate:** Dip a sheet of rice paper into a bowl of warm water for about 5–10 seconds—it should feel flexible, not soggy. Lay it flat on a clean plate or cutting board.
**Assemble:** Place a spoonful of the cooled lentil stew in the center of the rice paper, followed by a small handful of raw veggies.
**Roll:** Fold in the sides of the rice paper, then roll it up tightly from the bottom, like a burrito.
