Heat the olive oil in a medium nonstick skillet over medium heat. Add the sweet potato cubes, season with garlic powder, salt and pepper, and cook for 10-12 minutes, stirring occasionally, until golden and tender. Set aside.
In a bowl, whisk the eggs with a pinch of salt and pepper until the yolks and whites are fully combined.
Wipe the skillet clean, melt the butter over medium-low heat, and pour in the eggs.
Cook gently, pushing the cooked edges toward the center, until the eggs are mostly set but still slightly runny on top.
Sprinkle the ham, sweet potato cubes and shredded cheese over one half of the omelette.
Fold the other half over the filling and cook for 1 minute more until the cheese melts. Slide onto a plate and scatter with chives.
