Naturally gluten-free mini muffins blended with oats, ripe bananas, and sweet fresh strawberry chunks.

Flourless Strawberry Muffins

Flourless does not mean flavorless, and these strawberry muffins prove it every single time. Ripe bananas do all the work, keeping every bite soft, sweet, and naturally gluten-free while the strawberries burst into little pockets. They are halfway to dessert and wholly acceptable for breakfast.

👨‍🍳 Instructions

1
👨‍🍳

Preheat your oven to 350°F (175°C) and grease a mini muffin tin or line with mini paper liners.

2
👨‍🍳

Place the rolled oats, mashed banana, eggs, Greek yogurt, maple syrup, baking powder, and cinnamon into a blender.

3
👨‍🍳

Blend on high speed until completely smooth and batter-like, about 30-45 seconds.

4
👨‍🍳

Gently fold in the diced fresh strawberries by hand with a spatula. Pour batter into the mini muffin cups and bake for 12-15 minutes until set and golden around the edges.

⚠️ Common Mistakes

  • ✕

Overfilling the mini muffin cups, which causes them to spill over as they rise in the oven.

  • ✕

Using unripe bananas, which results in a lack of natural sweetness and moisture.

  • ✕

Cutting strawberries too large, making the mini muffins break apart when toddlers bite into them.

🔄 Variations

✦

Swap strawberries for diced fresh peaches or raspberries.

✦

Add a spoonful of hemp seeds into the blender batter for extra protein.

✦

Dust with a tiny bit of powdered coconut sugar on top before baking.

🧊 Storage

  • 📦

Store in an airtight container in the refrigerator for up to 4 days.

  • 📦

Freeze in a freezer bag for up to 2 months; thaw at room temperature or warm briefly before serving.

  • 📦

Pack easily in daycare snack containers.

💡 Chef Tips

✦

Blender batters make clean-up a breeze and yield an ultra-smooth texture without needing traditional flour.

✦

Dice strawberries very small so they distribute evenly throughout the mini muffins.

✦

Let muffins cool completely in the pan before removing so they hold their delicate shape.

❓ FAQ

Do I need a high-speed blender for this recipe? A

Any standard blender or food processor will easily break down the rolled oats into a smooth batter.

Are these muffins gluten-free? A

Yes, as long as you use certified gluten-free rolled oats, this recipe is 100% flourless and gluten-free.

Can I use frozen strawberries? A

Fresh strawberries work best because frozen berries release too much liquid and can make the blender batter too watery.
