This one comes straight from the Caribbean kitchen, where boldness is non-negotiable. We mash ripe avocado with flaked salt cod and wake it up with fresh herbs until it is creamy, salty, and entirely unforgettable. Serve it warm with bread or dumplings and let the flavor do the talking.
🥄 Ingredients
- 🫗 Fierce Base: 2 ripe avocados, 250g salted cod (morue), 100g cassava flour, 1 onion, 1/2 to 1 lime (juice), 2 garlic cloves, 4 sprigs green onion (cive/oignon pays), 1 Caribbean chili (or vegetarian pepper), salt and pepper to taste
- 🫗 Parmesan Tuiles: 50g parmesan, 5g flour, 30g grated cheese

👨🍳 Instructions
**Prepare Cod:** Desalt the cod by boiling in water. Drain, remove skin/bones, and shred finely.
**Toast Cassava:** Lightly toast the cassava flour in a dry pan until it develops a nutty aroma and turns slightly golden.
**Mash Base:** In a bowl, mash the avocado flesh. Add the shredded cod, finely chopped onion, garlic, green onions, and minced chili pepper.
**Combine:** Gradually stir in the toasted cassava flour. Add lime juice and adjust seasoning with salt and pepper.
**Form:** Shape the mixture into small balls or quenelles.
**Tuiles:** Mix parmesan, flour, and grated cheese. Place small mounds on a baking sheet and bake until melted and golden (tuiles). Serve the Fierce Avocado alongside the crispy tuiles.
