**Process Base:** In a food processor, pulse the almonds until they are finely ground.
**Combine:** Add the dates, cacao powder, ground flaxseeds, plant protein powder (if using), salt, and lemon juice. Process until the mixture begins to clump together into a thick dough.
**Add Fruit:** Add the raspberries and pulse just enough to incorporate them. Do not over-process, or the mixture will become too wet.
**Shape:** Using a small spoon or scoop, roll the mixture into small, bite-sized balls between your palms.
**Coat:** Mix the sesame seeds and popped amaranth on a plate. Roll each truffle in the mixture until evenly coated.
**Chill:** Place the truffles in the refrigerator for at least 30 minutes to firm up before serving.
