⚠️ Common Mistakes
- ✕
Flipping too early, before the surface bubbles, which tears the pancakes.
- ✕
Cooking over high heat, which browns the outside while the inside stays wet.
- ✕
Over-sweetening the batter, since the vanilla already adds plenty of flavor.
🔄 Variations
Fold a spoon of cocoa powder in for chocolate egg-white pancakes.
Add a pinch of nutmeg or orange zest for a different twist.
Use ground almonds instead of oat flour for a nuttier flavor.
🧊 Storage
- 📦
Best eaten immediately, straight from the pan.
- 📦
Leftover pancakes keep in the fridge for 1 day and reheat lightly in a toaster.
💡 Chef Tips
Tip 1: Keep the heat medium-low — pure egg-white pancakes burn easily.
Tip 2: Cook small pancakes; they are far easier to flip than large ones.
Tip 3: Whisking until the batter is slightly frothy gives the pancakes their lift.
