- 🫗 1 cup (60g) baby spinach, chopped

- 🫗 2 tablespoons (10g) grated Parmesan

Whisk the egg whites, whole egg and a pinch of salt and pepper in a bowl until slightly frothy.
Heat the oil in a nonstick skillet over medium heat. Sauté the mushrooms and onion for 3-4 minutes until golden.
Add the spinach and cook for 1 minute until it wilts. Spread the filling evenly in the pan.
Pour the egg mixture over the vegetables and tilt the pan to cover the base.
Cover and cook for 3-4 minutes until nearly set, then sprinkle with Parmesan and fold the omelette in half.
Slide onto a plate and serve hot.
