A taco night that survives every picky eater: seasoned meat, cheese, corn, and lettuce each in their own little cup, with tortillas on the side — letting kids build at their own pace.
Taco night usually ends with one child holding a shell like a weapon and another pulling everything apart anyway. Brown the meat in a skillet over medium heat, breaking it up, about 6 minutes. Drain any excess fat.
Sprinkle in the taco seasoning, add the water, and simmer 3 minutes until thick.
Microwave the tortillas, wrapped in a tea towel, for 30 seconds to soften.
Set four small bowls or muffin cups in a row on each plate or a divided tray. Fill each with a different component: meat, corn, lettuce, tomatoes, cheese, and avocado if using.
Serve the warm tortillas and a little pot of sour cream on the side. Let each child build — or not build — their own plate.
