β οΈ Common Mistakes
- β
Grainy puree: If your mangoes are fibrous, strain the puree through a sieve before incorporating it into the cream for a perfectly smooth texture.
π Variations
Exotic Version: Add a little shredded coconut on top when serving.
Gelled Version: For a firmer texture, dissolve 1 teaspoon of gelatin in a little warm puree before incorporating.
π§ Storage
- π¦
Keeps for 2 days in the refrigerator. Freezing is not recommended, as the cream texture would change upon thawing.
π‘ Chef Tips
Fruit choice: Use very ripe mangoes (Alphonso or Kent type) for a vibrant color and rich flavor.
Chill: Make sure the bowl and mixer beaters are very cold to achieve a firm whipped cream.
