Creamy Chicken Mushroom Light Parmesan Risotto

🥄 Ingredients
- 🫗 1 cup (200g) arborio rice
- 🫗 300g cooked chicken breast, shredded
- 🫗 200g mushrooms, sliced
- 🫗 1 small onion, finely diced
- 🫗 1 clove garlic, minced
- 🫗 1/2 cup dry white wine (or extra stock)
- 🫗 1 liter low-sodium chicken stock, kept warm
- 🫗 3 tablespoons light parmesan, grated
- 🫗 1 tablespoon olive oil
- 🫗 1 tablespoon butter
- 🫗 fresh thyme, salt and black pepper, to taste

👨🍳 Instructions
Heat the olive oil in a wide pan and sauté the onion and garlic until soft, about 3 minutes.
Add the mushrooms and cook until golden, about 5 minutes.
Stir in the rice and toast for 2 minutes, then pour in the wine and let it evaporate.
Add the warm stock one ladle at a time, stirring constantly, until each addition is absorbed. Continue for 18-20 minutes until the rice is creamy and al dente.
Fold in the shredded chicken, parmesan and butter, season with thyme, salt and pepper, and rest for 2 minutes before serving.
