🥄 Ingredients
- 🫗 400g spaghetti or bucatini
- 🫗 200g pancetta or guanciale, diced
- 🫗 4 large egg yolks + 2 whole eggs
- 🫗 100g Pecorino Romano, finely grated
- 🫗 50g Parmigiano-Reggiano, finely grated
- 🫗 2 tsp freshly cracked black pepper
- 🫗 1 tsp sea salt (for pasta water)
- 🫗 Fresh parsley (for garnish)

👨🍳 Instructions
Bring a large pot of salted water to a boil. Cook the pasta until al dente, reserving 1 ½ cups of pasta water before draining.
While the pasta cooks, place the diced pancetta in a cold skillet. Turn the heat to medium and render the fat until the meat is golden and crispy, about 6–8 minutes. Remove from heat.
In a bowl, whisk together the egg yolks, whole eggs, Pecorino, Parmigiano, and black pepper until smooth and creamy.
Add the hot drained pasta directly to the skillet with the pancetta and toss well to coat in the rendered fat.
Pour the egg and cheese mixture over the pasta while tossing vigorously. Add splashes of reserved pasta water a little at a time until you achieve a silky, emulsified sauce that coats each strand.
Serve immediately in warm bowls, topped with extra grated cheese, a crack of black pepper, and fresh parsley.
