- 🫗 Cod Filling: 400g salted cod (morue), 1 red bell pepper, 1 onion, 1 vegetarian pepper, 2 sprigs green onion (cive), 2 sprigs parsley, 3 garlic cloves, 1/2 tsp pepper, 1 tsp salt, 1 Tbsp Herbes de Provence, 2 Tbsp olive oil, 1 lemon (juice)
- 🫗 Custard: 3 eggs, 40 cl heavy cream, 50g grated cheese

**Prepare Pastry:** Mix flour, butter, salt, egg yolk, and water. Form a dough, chill briefly, roll out, and press into tartlet molds.
**Prepare Cod:** Desalt the cod by boiling, drain well, remove bones, and shred finely.
**Sauté Aromatics:** Heat olive oil and sauté onion, peppers, garlic, herbs, and seasonings. Add the shredded cod and lemon juice; cook until fragrant.
**Assemble:** Fill tartlet shells with the cod mixture.
