β οΈ Common Mistakes
- β
Too Much Garlic: Garlic can quickly overpower the delicate flavor of the tahini. Stick to the 1/2 clove recommendation initially; you can always add more if you like a stronger garlic bite.
- β
Skimping on Tahini: Quality tahini is the backbone of hummus flavor. If your tahini is very old or separates into a very hard bottom layer, stir it vigorously before using it.
π Variations
Roasted Garlic: Use roasted garlic instead of raw for a milder, deeper, and slightly sweeter flavor profile.
Spiced: Add a pinch of cayenne pepper or smoked paprika during the blending process for a warm, smoky kick.
π§ Storage
- π¦
Store in an airtight container in the refrigerator for up to 5 days. You can drizzle a small amount of olive oil on the surface to prevent the hummus from drying out.
π‘ Chef Tips
The "Guacamole" Consistency: Don't rush the water. Adding it slowly while the processor is running is the "secret" to achieving that airy, professional-grade texture.
Chickpea Prep: If you have time, removing the skins from the chickpeas (by rubbing them between two kitchen towels) will result in an even smoother, ultra-luxurious hummus.
