π¨βπ³ Instructions
**Blend Batter:** In a blender or bowl, mash or blend the banana, vegan milk, chia/flax seeds, cinnamon, and vanilla until smooth. Let the mixture sit for 5 minutes so the seeds can thicken the batter.
**Dip:** Pour the batter into a wide, shallow dish. Dip each slice of bread into the mixture, allowing it to soak for about 10β20 seconds per side (longer for thicker bread).
**Cook:** Heat a non-stick skillet or griddle with a light coat of oil over medium heat.
**Fry:** Place the soaked bread into the pan and cook for 3β4 minutes per side, or until golden brown and crisp on the edges.
**Serve:** Serve hot with your favorite toppings like maple syrup, fresh berries, or a dollop of jam.

β οΈ Common Mistakes
- β
Crowding the Pan: Do not cook too many slices at once. If the pan is crowded, the temperature drops and the toast will steam instead of getting that crispy, golden-brown crust.
- β
Too Much Heat: If the heat is too high, the outside will burn while the inside remains soggy. Medium-low heat is the sweet spot.
π Variations
The "Custard" Upgrade: Add a tablespoon of coconut yogurt or silken tofu to the blender for an even richer, thicker batter.
Cardamom & Orange: Add a pinch of ground cardamom and a teaspoon of fresh orange zest for a sophisticated brunch upgrade.
π§ Storage
- π¦
This is best served immediately. If you have leftovers, they can be kept in the fridge and reheated in a toaster, though they will lose some of the signature fluffiness.
π‘ Chef Tips
Stale Bread is Best: If your bread is very fresh and soft, it may soak up too much liquid and fall apart. If you have time, leave the bread slices out on the counter for an hour or lightly toast them before dipping.
Flax vs. Chia: Both work perfectly as binders! Ground flaxseed will give you a slightly more "eggy" golden color, while chia seeds will add a bit of pleasant texture.
