- π« 1/4 medium red onion, thinly sliced
- π« 1 bell pepper (color of choice), chopped
- π« 1 English cucumber, sliced
- π« 1/2 cup Kalamata olives, cut into thirds
- π« 6 oz (approx. 170g) feta cheese, crumbled
- π« 1/4 cup red wine vinegar
- π« 1 teaspoon dried oregano
- π« 1/2 cup extra-virgin olive oil
- π« 2 garlic cloves, pressed or finely minced
- π« 3/4 teaspoon sea salt
- π« 1/2 teaspoon black pepper

**Prepare dressing:** In a small bowl, mix vinegar, oregano, garlic, salt, pepper and olive oil. Whisk until smooth and emulsified.
**Assemble:** In a large bowl, combine tomatoes, red onion, bell pepper, cucumber and olives.
**Mix:** Pour dressing over vegetables and toss gently to coat well.
**Finish:** Add crumbled feta cheese on top. You can mix lightly or leave the feta in large chunks for an authentic look.
**Serve:** Let rest 5 to 10 minutes before serving to allow flavors to meld.
