Store-bought tikka masala quietly hides a shocking amount of sugar. This homemade version gets its sweetness only from ripe tomatoes, while the sauce clings to yogurt-marinated chicken that turns silky, not stringy. And instead of a rice bowl, the whole thing lands on roasted cauliflower — a base with nearly no fast carbs at all.

- 🫗 2 skinless chicken breasts (about 150g / 5 oz each), cubed
- 🫗 150g / 2/3 cup plain full-fat Greek yogurt, divided
- 🫗 1 tablespoon plus 1/2 teaspoon garam masala
- 🫗 1 teaspoon ground turmeric, divided
- 🫗 1 teaspoon ground cumin
- 🫗 1/2 teaspoon smoked paprika
- 🫗 1 large garlic clove, grated
- 🫗 1 teaspoon grated fresh ginger
- 🫗 1 can (400g / 14 oz) crushed tomatoes, no added sugar
- 🫗 100ml / 1/2 cup light cream
- 🫗 1 small head cauliflower (about 500g / 1 lb), broken into florets

Combine the cubed chicken with half the yogurt, the heaped tablespoon of garam masala, half the turmeric, the cumin, garlic, ginger, and a pinch of salt. Marinate 15 minutes, or overnight in the fridge.
Meanwhile, preheat the oven to 425°F (220°C). Toss the cauliflower with 1 tablespoon olive oil, the remaining turmeric, and the paprika, then roast 25 minutes, turning once, until browned at the edges and tender inside.
Heat the remaining olive oil in a wide pan over medium-high heat. Sear the chicken in a single layer 2–3 minutes per side until golden; remove to a plate.
Lower the heat, add the tomatoes, the remaining 1/2 teaspoon garam masala, and the other half of the yogurt. Simmer gently 8 minutes.
Return the chicken with its juices, stir in the light cream, and simmer 5 minutes until the sauce thickens and the chicken is cooked through (165°F / 74°C).
Season, scatter cilantro over the top, and serve with the roasted cauliflower to soak up every spoonful.
