Place the bulgur in a bowl, cover with boiling water, and set aside for 10-15 minutes until tender. Drain any excess water.
Season the chicken with salt, pepper and half the cumin. Grill or pan-sear for 5-6 minutes per side until cooked through.
Rest the chicken for 5 minutes, then dice into bite-size pieces.
