- π« 1 1/2 cups (180g) chestnut flour
- π« 3 large eggs
- π« 1/3 cup (80ml) olive oil
- π« 1/2 cup (120ml) milk (or plant-based milk)
- π« 1/3 cup (80g) honey
- π« 1 1/2 teaspoons baking powder
- π« 1/2 teaspoon baking soda
- π« 1/4 teaspoon sea salt
- π« 1/2 cup (75g) dried figs, chopped
- π« 1/3 cup (40g) walnuts, roughly chopped

Preheat the oven to 350Β°F (180Β°C) and line an 8x8 inch baking pan with parchment paper.
In a bowl, whisk together the chestnut flour, baking powder, baking soda and salt.
In a second bowl, whisk the eggs, olive oil, milk and honey until smooth.
Fold the dry ingredients into the wet mixture until just combined, then stir in the figs and walnuts.
Pour the batter into the prepared pan and bake for 30-35 minutes, until a toothpick comes out mostly clean.
Cool in the pan for 10 minutes, then transfer to a wire rack. Slice into 8 pieces once cool.
