- π« 1 cup brown sugar (packed)
- π« 1 cup white granulated sugar
- π« 3/4 cup neutral oil
- π« 3 eggs
- π« 1/2 cup yogurt
- π« 1 tablespoon lemon juice
- π« 2 cups grated carrots
- π« 1 cup chopped pineapple
- π« 1 cup chopped walnuts
- π« 1/2 cup golden raisins
- π« 1/2 cup unsalted butter
- π« 3/4 cup cream cheese
- π« 3/4 cup powdered sugar
- π« 2 tablespoons milk

Preheat your oven to 180Β°C and prepare a cake pan by greasing it.
In a large bowl, mix the oil, brown sugar and white sugar. Add the eggs one by one, then the yogurt and lemon juice.
In another bowl, sift the flour, baking powder, baking soda and salt.
Gradually incorporate the dry ingredients into the wet ingredients.
Add the grated carrots, pineapple, walnuts and raisins. Mix gently until you get a smooth batter.
Pour the batter into the pan and bake for about 45 minutes (check doneness with the tip of a knife).
While the cake cools, prepare the icing by beating the butter and cream cheese, then gradually add the powdered sugar and milk until you get a creamy texture.
Spread the icing evenly over the cooled cake.
