Combine the apples, pears, cardamom pods, cinnamon stick, and water in a medium saucepan.
Cover and cook over medium-low heat 15–18 minutes, stirring now and then, until the fruit releases its juices and softens.
Uncover and cook 3–5 minutes more until the liquid thickens into a light syrup.
Remove the cardamom pods and cinnamon stick.
Stir in the lemon juice and vanilla; cool slightly.
Serve warm or cold, plain or spooned over a dollop of Greek yogurt.
