Recreate the famous 'Tiger Sugar' café trend at home! This Brown Sugar Boba Milk features rich, caramelized brown sugar syrup painted onto the glass and filled with cold milk.
The Tiger Sugar café trend, unmasked at home. Caramelized brown sugar syrup streaks the inside of the glass, chewy tapioca pearls sink to the bottom, and cold milk turns the whole thing into stripes — better than the café line, sooner than the delivery app.

👨🍳 Instructions
Cook the tapioca pearls according to package instructions. Drain and set aside.
In a small saucepan, combine the 4 tablespoons of dark brown sugar and 3 oz (90 ml) of water. Bring to a simmer over medium heat.
Add the cooked boba pearls into the simmering sugar water. Cook for 8-10 minutes, stirring constantly, until the liquid reduces into a thick, glossy, molasses-like syrup. Remove from heat.
Spoon the warm boba along with 2 tablespoons of the hot syrup into your serving glass.
Tilt and rotate the glass horizontally so the thick syrup coats the entire inside wall, creating beautiful, rustic dark stripes.
Pack the glass carefully with ice cubes to lock the syrup lines in place.
Pour in 8 oz (240 ml) of ice-cold whole milk and serve immediately with a wide straw.

⚠️ Common Mistakes
- ✕
Using Light Brown Sugar: Light brown sugar lacks the high molasses content needed to create that deep, smoky, almost-burnt caramel flavor profile profile characteristic of authentic Taiwanese bubble tea.
🔄 Variations
Brown Sugar Matcha: Pour a 2 oz (60 ml) shot of whisked ceremonial matcha green tea right over the top of the milk for an amazing earthy twist.
Oat Milk Tiger Sugar: Swap whole milk for an extra-creamy barista-grade oat milk to create a rich dairy-free option.
🧊 Storage
- 📦
Consume within 2 hours. Do not refrigerate the finished drink, as the cold dairy will cause the warm tapioca pearls to stiffen up into a rubbery texture.
💡 Chef Tips
The "Tiger Stripes" Effect: The secret to getting those beautiful dark streaks is the thickness of your syrup. If the syrup is too watery, it will immediately slip to the bottom. It needs to look like thick caramel before you paint the glass!
No Tea Required: Authentic brown sugar boba milk actually contains no tea leaf components at all. It relies entirely on the contrast between the rich, smoky caramelized sugar and pure, fresh cold dairy.
