Meanwhile, in a bowl combine the beef, breadcrumbs, egg, garlic, parsley, oregano, salt and pepper. Mix until just combined.
Roll the mixture into 16 meatballs, about 1 1/2 inches each.
Heat the olive oil in a large skillet and brown the meatballs for 4-5 minutes total, turning to color all sides.
Pour in the crushed tomatoes, cover, and simmer for 12-15 minutes until the meatballs are cooked through.
Mash the sweet potatoes with the milk, butter and nutmeg until smooth.
Serve the meatballs and sauce over a bed of sweet potato mash.
⚠️ Common Mistakes
- ✕
Skimping on breadcrumbs, which makes meatballs fall apart in the sauce.
- ✕
Mashing sweet potatoes while still undercooked, leaving lumpy pockets.
- ✕
Boiling the tomatoes too hard, which makes the sauce watery and thin.
🔄 Variations
Swap the beef for ground turkey or chicken for a leaner option.
Add a handful of spinach to the sauce at the end for extra micronutrients.
Top with grated parmesan or crispy sage leaves for a finish.
🧊 Storage
- 📦
Keep the meatballs and mash in separate containers in the fridge for up to 3 days.
- 📦
Freeze the meatballs in sauce for up to 2 months; mash freezes well too.
💡 Chef Tips
Tip 1: Gently mix the meatball mixture; overworking it makes tough meatballs.
Tip 2: Use wet hands to roll the meatballs so the mixture does not stick.
Tip 3: Simmering the meatballs in the tomato sauce keeps them moist and adds depth of flavor.
Tip 4: Season the mash generously; sweet potatoes need salt to taste their best.
