Avocado and Hemp Seed Green Gazpacho: Refreshing Vascular Support
By the QuiteRecipes team (Jamy & Kaïna) | Food Service Professional, Early Childhood Expert & Parents
Raw avocado, hemp seeds, cucumber and lime blended cold — hydration, plant omegas and potassium in a gazpacho built for healthy pressure and flow.
Gazpacho proves the oven is optional. This cold, raw soup spins avocado, cucumber, green bell pepper, garlic, lime, hemp seeds, and cold-pressed olive oil into a bowl of pure vascular support — hydration from the cucumber, potassium from almost every ingredient (the mineral that keeps blood pressure and flow on the level), plant omega-3s from the hemp hearts, and monounsaturated fat from the avocado. Fifteen minutes and a blender, and you have the most refreshing thing a hot day — or a hot summer body — can request.

👨🍳 Instructions
Place the avocado, cucumber, green pepper, hemp seeds, garlic, lime juice, and olive oil in a blender.
Add the cold water and blend on high until completely smooth and emerald (45–60 seconds).
Season with salt and white pepper; taste — adjust lime or salt.
Chill at least 20 minutes in the fridge. Serve cold, scattered with herbs, a drizzle of oil, and hemp seeds.
⚠️ Common Mistakes
- ✕
Under-blending until it's grainy; gazpacho should pour like a thick smoothie.
- ✕
Adding too much garlic, which petulantly takes over the whole bowl.
- ✕
Serving straight from the blender — even fifteen minutes of chill transforms the flavor.
🔄 Variations
Add a green apple for tartness.
Swirl in a spoon of Greek yogurt just before serving.
Make it spicy with a pinch of jalapeño or chili flakes.
Serve over ice cubes on the hottest days.
🧊 Storage
- 📦
Keeps 2 days in the fridge — the avocado browns slowly under the oil's protective layer; stir before serving.
- 📦
It doesn't freeze well; the avocado texture splits.
💡 Chef Tips
Tip 1: Cold water and a full chill are non-negotiable — warm gazpacho is a different, sadder soup.
Tip 2: White pepper over black — the black flecks look like dirt in a green soup.
Tip 3: Save a few cucumber strips and avocado cubes as a chunky garnish for texture contrast.
❓ FAQ
Q
Why potassium for vascular health? Potassium helps blood vessels relax and balances sodium — steadying blood pressure, and the raw-plant base here is loaded with it.
Q
Does it count as hydration? Genuinely — cucumber and cold water deliver fluid without the sugar of a sports drink, correct for hot afternoons.
Q
Are hemp seeds necessary? They add plant omega-3s and a subtle creaminess; if you're out, a spoon of tahini works in a pinch.
Q
It's called gazpacho — is it served cold always? Always; that's the whole genre and the point of its refreshment.
